Pistachio Truffles with Raspberries
Ingredients:
200 g white chocolate finely chopped
⅓ cup heavy cream 80 ml
½ cup pistachio paste or finely ground unsalted pistachios 60 g
20 to 24 small fresh raspberries
1 cup finely chopped roasted pistachios for coating 100 g
1 tbsp unsalted butter room temperature
1 tsp vanilla extract
Pinch of salt
