Cajun Sausage and Rice Skillet (One-Pan Dinner in 30 minutes!)

 Ingredients:

  • 14 oz (400 g) smoked sausage (Andouille or kielbasa), sliced
  • 1 cup long grain white rice (uncooked)
  • 1 medium onion, chopped
  • 1 bell pepper (red, yellow, or green), chopped
  • 2 cloves garlic, minced
  • 2 ½ cups chicken broth
  • 1 can (14 oz) diced tomatoes (optional for extra flavor)
  • 2 tbsp olive oil (or butter)
  • 1 tsp Cajun seasoning (add more to taste)
  • ½ tsp paprika
  • ½ tsp dried thyme
  • Salt & black pepper to taste
  • Fresh parsley for garnish
