Cajun Sausage and Rice Skillet (One-Pan Dinner in 30 minutes!)

  1. Cook the sausage
    Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned (about 4–5 minutes). Remove and set aside.
  2. Sauté veggies
    In the same skillet, add chopped onion and bell pepper. Cook until softened (3–4 minutes). Stir in garlic and cook for 1 more minute.
  3. Toast the rice
    Add the uncooked rice, Cajun seasoning, paprika, thyme, salt, and pepper. Stir well so the rice gets coated with the seasonings and oil.
  4. Add broth & simmer
    Pour in chicken broth (and diced tomatoes if using). Bring to a boil, then reduce heat to low. Cover and let simmer for 18–20 minutes, until rice is tender and liquid absorbed.
  5. Combine & serve
    Return the cooked sausage to the skillet. Stir everything together and cook for another 2 minutes. Garnish with fresh parsley and serve hot!
