In a bowl, mix together the flour, sugar, baking powder, and salt.

In another bowl, whisk the eggs, milk, melted butter, and vanilla.

Pour the wet mixture into the dry ingredients and stir gently until just combined (don’t overmix, the batter should stay a bit lumpy).

Heat a lightly buttered or oiled pan over medium heat. Pour a small ladle of batter into the pan.

Cook until bubbles form on the surface, then flip and cook the other side until golden.

Serve warm with maple syrup and, if you like, fresh fruits or chocolate.
