Spinach and Cheese Puff Pastry Squares

Prepare the filling
Sauté the onion in oil.
Add the spinach, cook for a few minutes, then let cool.
Mix with the feta, mozzarella, salt, pepper, and a little nutmeg.
Assemble the puff pastry
Roll out a sheet of puff pastry on a baking sheet.
Spread the filling over it, leaving a free edge. Cover with the second layer of pastry and seal the edges with a fork.
Cut and glaze
With a knife, score squares (without separating completely).
Brush with beaten egg and sprinkle with sesame seeds.
Bake
Bake at 180°C (fan oven) for about 25–30 minutes, until golden brown.
Serve
Cut the squares completely and enjoy hot or warm.
