Seafood bisque with crab and shrimp

 

Perfume and enrich the soup
Add the black pepper, tomato concentrate and thick cream. Mix well until you get a smooth and homogeneous texture.

Smooth texture option (optional)
For an even more velvety soup, you can mix the mixture with a blender or food processor, and then put it back in the pan. This step is optional but provides a very refined texture.

Add the seafood
Carefully incorporate crab meat, shrimp and wine (or sherry).
Bring to a slight boil, then immediately lower the heat and simmer for 5 to 7 minutes, just the time to warm the seafood without overcooking them.

Finalize and serve
Taste and adjust the seasoning if necessary.
Serve warm, accompanied by toast or croutons.
