2 large cucumbers (or 4 Persian cucumbers), thinly sliced

2 cups cherry or grape tomatoes, halved

1 small red onion, thinly sliced

¼ cup fresh dill or parsley, chopped (or a mix!)

¼ cup olive oil

3 tbsp red wine vinegar (or apple cider vinegar)

1 tsp sugar (optional, to balance acidity)

1 tsp salt

½ tsp black pepper

🥒 Cucumber tip: If using regular cucumbers, peel and seed them to prevent sogginess. Persian or English cucumbers? Leave skin on!

Step-by-Step Instructions

1. Prep the Veggies

In a large bowl, combine cucumbers, tomatoes, onions, and herbs.

2. Make the Marinade

In a small bowl, whisk olive oil, vinegar, sugar, salt, and pepper until emulsified.

3. Marinate & Chill

Cover and refrigerate for at least 30 minutes (or up to 24 hours).
