A little icing sugar for finishing
(Optional) Lemon zest or vanilla extract
👩🍳 Preparation
Preheat the oven to 170°C (fan).
In a bowl, whisk the egg yolks and sugar until light and fluffy.
Add the almond flour and mix gently.
In a separate bowl, beat the egg whites with a pinch of salt until stiff. Add a few drops of lemon juice to help them hold their shape.
Gently fold the egg whites into the previous mixture with a spatula, being careful not to deflate them.
Pour the mixture into a greased or parchment-lined cake pan.
