Ingredients
For the Fried Chicken:
2 large chicken breasts (or 4 fillets, pounded evenly)
1 cup flour
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
½ tsp salt
1 cup buttermilk (or milk with 1 tbsp lemon juice)
Oil for frying
For the Gravy:
2 tbsp butter
2 tbsp flour
2 cups chicken broth (warm)
Salt & black pepper to taste
A splash of cream (optional for richness)
For the Mashed Potatoes:
4 medium potatoes (peeled and cubed)
2 tbsp butter
½ cup warm milk (more if needed)
Salt & pepper to taste
Optional: a little garlic powder for flavor
