Step 2: Sear the Steak Bites

Heat olive oil in a large skillet (preferably cast iron) over medium-high heat.

Sear for 2–3 minutes per side until browned and cooked to your desired doneness (medium-rare to medium works best).

Add 4 tablespoons of butter and minced garlic during the last minute of cooking, tossing the steak bites so they’re coated in garlic butter.
