Creamy Vanilla Custard Pastry Squares – A Classic Elegant Dessert With Layers of Flaky Pastry and Smooth Custard

Step 1: Prepare and Bake the Pastry

Preheat your oven to:

400°F (200°C)

Line baking sheets with parchment paper.

Place the puff pastry sheets on the prepared trays.

Using a fork, prick the pastry all over. This helps prevent the pastry from puffing too much while baking.

Brush the tops lightly with beaten egg.

Bake for:

15–18 minutes

until the pastry becomes golden brown and crisp.

Remove from the oven and allow the pastry sheets to cool completely.

Step 2: Prepare the Vanilla Custard

In a saucepan, combine:

  • Milk
  • Sugar
  • Cornstarch

Whisk until the mixture is smooth and there are no lumps.

Add the egg yolks and continue whisking.

Cook over medium heat, stirring constantly, until the custard becomes thick and creamy.

This usually takes several minutes.

Once thickened, remove from heat.

Add:

  • Vanilla extract
  • Unsalted butter

Stir until the butter melts completely and the custard becomes smooth.

Allow it to cool slightly before assembling the dessert.

Step 3: Assemble the Layers

Place one baked puff pastry sheet inside a:

9×9-inch baking dish

Pour the warm custard evenly over the pastry.

Use a spatula to smooth the surface.

Place the second puff pastry sheet on top and gently press it down.

Be careful not to crush the delicate layers.

Step 4: Chill the Dessert

Cover and refrigerate for at least:

4 hours

or preferably overnight.

This allows the custard to fully set and makes slicing much easier.

The longer chilling time also helps the flavors develop.

Step 5: Serve

Before serving:

  • Dust the top generously with powdered sugar
  • Slice into squares using a serrated knife

Serve chilled and enjoy the creamy texture combined with the crisp pastry layers.
