Mix dry ingredients

In a bowl, whisk together flour, sugar, baking powder, and salt.

Mix wet ingredients

In another bowl, whisk milk, egg, melted butter, and vanilla.

Combine

Pour wet into dry ingredients. Stir gently until just combined (batter should be slightly lumpy — don’t overmix!).

Cook pancakes

Heat a non-stick pan over medium heat and lightly butter it.

Pour about ¼ cup of batter per pancake.

Cook until bubbles form on the surface, then flip and cook until golden (1–2 minutes each side).
