-Prep the Potatoes:
Wash and boil the baby potatoes until fork-tender (about 10–12 min). Drain and let cool slightly. Cut them in halves.
-Cook the Base:
In a cast iron skillet, heat olive oil over medium heat. Add potatoes, season with salt & pepper, and sauté for 4–5 min until slightly crispy.
-Add Flavors:
Stir in minced garlic and half of the chopped bacon. Cook 1 more min.
-Cheesy Topping:
Sprinkle cheddar + mozzarella evenly on top of potatoes. Let it melt and bubble (you can place the skillet under the oven broiler for 2–3 min for a golden top).
-Finish & Serve:
Remove from heat, drizzle with sour cream, sprinkle with remaining bacon and green onions. Serve hot straight from the skillet!
