Cheesy Beef Puff Pastry Rolls – Crispy, Juicy, and Packed With Flavor

Step 1: Prepare the Onion Mixture

Preheat your oven to:

425°F (200°C)

Grate the whole onion and keep the juices.

Add the grated onion to the panko breadcrumbs and allow them to absorb the moisture.

This step helps create a softer and more flavorful beef filling.

Step 2: Prepare the Beef Filling

In a large bowl, combine:

  • Onion and breadcrumb mixture
  • Ground beef
  • One whole egg
  • Minced garlic
  • Beef stock cube
  • Salt
  • Black pepper
  • Chopped jalapeños

Mix everything together by hand until well combined.

Avoid overmixing because it can make the filling too dense.

Step 3: Add the Cheese

Add:

  • Shredded cheddar cheese
  • Grated Parmesan cheese

Mix gently until the cheese is evenly distributed throughout the beef mixture.

The cheese will melt during baking and create a deliciously rich center.

Step 4: Assemble the Rolls

Divide the beef mixture into two equal portions.

Place one sheet of puff pastry on a flat surface.

Add one portion of the beef mixture along the center of the pastry.

Brush a little egg white along one long edge of the pastry.

Roll the pastry over the filling and seal the edge underneath.

Repeat the same process with the second pastry sheet.

Step 5: Add the Topping

Place the rolls on a baking tray lined with parchment paper.

Make three small cuts on the top of each roll to allow steam to escape.

Brush the pastry with egg yolk.

Sprinkle sesame seeds over the top.

Step 6: Bake Until Golden

Bake in the oven for:

35 minutes

Then transfer the rolls onto a baking rack and continue baking for:

15 more minutes

This extra baking time helps the pastry become fully crispy and golden.

Let them cool for a few minutes before slicing.
